I have searched everywhere but cannot find where you change the latitude and longitude for the map in the Location tab for each vehicle. Can this be done in the backend or do I need to find the file and edit it there?

Dear Paul,
You can change the address of vehicle on the backend. Please go to Components -> Vehicle Manager -> Vehicles, there click on the last tab Seller Contacts and change the address. After filling in the address fields, click on button Show on map and latitude and longitude will be automatically determined.
