In rent request we as me seem added all important fields and if you with help language file constant change captions for some fields - you may ask from user add additional info about that rent request.
But if you any way need add new field you will need edit so files:
this file responsible for data prepare for admin part
this file responsible for data show for admin part
this file responsible for data prepare for frontend part
this file responsible for data show for frontend part
this file responsible for rent_request save in database
this file responsible for rent save in database
also you will need change tables jos_rem_rent_request and jos_rem_rent
For search place in code where you need do ad some changes you may do with help "task" variables from http request
Or you may ask custom version with all features what you wish - with help Ordasoft support form
