Are there additional available views for the books and category pages instead of these columns/row grids?

Any view you may easy change or add new. All Book library views located:
{site}/components/com_booklibrary/views/

If you need some special, We may propose to you order this as "customization service".

These look like they are all full joomla templates? I was looking for different "default.php" options for the display of the Book Library component only. Do you offer those?

Specifically, I want to make the single category NOT in a table and include the description and buy links, so that the single category pages look something like this:

The image shows what it looks like now and what I want to do... I know I need to edit the template file for the single category, but I don't know how and thought maybe you already had something with the description on this page.

As I understand - you no need "ome book details page".
So there 3 way:
1. You use component book-library and self change how look the view in:
{site}/components/com_booklibrary/views/showCategory/tmpl/
2. You order "create this view" as "customization service" from us, Please write to ordasoft.com/contact-us-form
3. You may esay create "Books site" with help our website Builder. There you self, easy, with help "Drag&Drop Loyout builder" may create exactly what you need
