I'm trying to understand the help text for allowed values in the Fields screen:

Create a list of options as a list in Allowed values list. These values will be the same for check in all content types.
For a [single on/off checkbox] widget, define the [off] value first, then the [on] value in the Allowed values section. Note that the checkbox will be labeled with the label of the [on] value.

The possible values this field can contain. Enter one value per line, in the format key|label. The key is the value that will be stored in the database, and it must match the field storage type (text). The label is optional, and the key will be used as the label if no label is specified.

This seems to imply that I could create multiple checkboxes in a set? If I wanted to do three or four, what would I put in the Allowed values field?

It is not possible to create multiple checkboxes.

You can create multiple radio buttons.
