For instance I want to rent a car. It costs 50 USD per day. I also want to offer some additional items to book. For instance a kilometer package or a bicycle holder. Can CCK calculate the final price in the rental cart and is it possible to create such a booking system with CCK?

Please check, you and in OS Website Builder, You may add to every products so many price fields as you need.

field1:
Booking per day - 50$
field 2 check box : insurance +10$
child chair(checkbox): +5$
tax: +10%

No we calculate fields in 1 instance. we not calculate child
You may to one instance add many price fields:
as example
car - 10$
+
select list, color (white: +0$, red:+2$,black:+5$)
+
insurance : (+5 simply,+10$ whole)
-
Discount: -10% for some user group
