sorry, in OrdaSoft Joomla CCK - all data any way will save in database. This created because if you have on site some request form - you as admin must see these request data.
For send some data by email in OrdaSoft Joomla CCK - you need to Layout to add "Mail" field, and in this field - you need create "email body" and add there all fields from this form and text - which you need see in email.
