3 questions before I buy the Pro version of Joomla CCK

Does it have a stripe plugin
If I build an app to take payments using stripe or offline, can it generate pdf invoices
Can I use it to generate pdf certificates and email them to users

- Yes, Joomla CCK has stripe plugin

can it generate pdf invoices
-This is Joomla CCk(content constarction kit) - and we have PDF layout. so you may any data show as PDF.
-Also in Joomla CCK we have possibility create "SQL Entity" - with it you may show on "yours website" any data from DataBase
- we have "CCK import" (with SQL Entity and PDF layouts with "user order details" - for show to users orders details from frontend. There user(after login to website can see all details about your order) And You will can download this "CCK export" and add to your website - and change in it some layouts - if you need

Also Joomla CCK has "Mail send" possibility - so you may connect with "Order approve" (or order status change) email to client send with link where client may download form with "His Order Details"

I not undrerstand what you mean - but as I said - we have PDF layout so you may show any layouts as PDF (as example if on yours site you want create "Term and Condition Form"
- you easy may create it with our CCK and add for it "PDF Term and Condition"
