Is it possible to create a line break in the sub-titles to force parts of the sub-title to start a new line?

Please check: it Is "Image Gallery"(ordasoft.com/os-image-gallery.html) - so for create robust layouts, we show clean text in title (without HTML tags). So you can't access to some title part, and you can't change title part

If you know CSS/HTML and for you is good the simply layouts like:
ordasvit.com/os-responsive-image-gallery...d-description-bottom
or
ordasvit.com/os-responsive-image-gallery...e-title-layout-float
or any other simply layout with 3 fields: image, title, description - you may create this with help CCK
ordasoft.com/cck-content-construction-kit-for-joomla.html
BUt when user will click on image - you will show item details (but not in fancy box).
But in CCK - you may add cover HTML element to field, so you will can connect to it with help CSS
