Hi Andrew,
Maybe it can cause some issues, I noted I have:
Server Connection Collation set as utf8mb4_unicode_ci
Database > Tables > Columns are all set as utf8mb4_unicode_ci
I run Admin Tools > Change Database Collation > Custom: utf8mb4_unicode_ci

Why I have back Joomla > System Information > Database Connection Collation: utf8mb4_general_ci ?

It should be utf8mb4_unicode_ci, Am I right ?
Please, Am I missing anything ?
Please, Do you have any suggestions on How can I change it ?

Hi

For MySQL the Joomla show Database Connection Collation, with help SQL request:

SHOW VARIABLES LIKE "collation_connection"

really many thanks, I tested and investigated it.
I reported it on Joomla GitHub, because I suspect it can be a Joomla BUG (I have back the same on new Joomla 4 beta 5 installation): github.com/joomla/joomla-cms/issues/31468
