Is there anyway to limit the amount of text displayed (see highlight in image)?
Well it won't let me upload my image.......
Or even display nothing until the item is opened?

Do you mean this, Please check attachment image.
If YES, In OrdaSoft car rental software this is not configure able.
For this need edit self layout. Please send to us full FTP and supper admin access
