I notice on your demos that searches and vehicle pages have a location
/ google map. Can this be turned off? I am building a website for a dealer
who only has one location so a map makes no sense.

for remove location map in category list - you need rebuild that view in folder:
components/com_vehiclemanager/views/
For hide location map in evey vehicle you may with help Option (if you have Vehicle manager pro version), other exactly as before: in view
