In OrdaSoft Joomla CCK - I cannot select fields the choice fields is not visible?

Sorry I not understand your question. We need more details what exactly you mean.
In Ordasoft Joomla CCK for add some field, you need
1. In Layout manager - select "Input layout" (add instance, add review, add request)
2. Press this layout edit
3. In "Layout edit" at left sidebar, press "add field"
4. There Press NEW - and create field which you need.
After field had created - you may add this field to any Layout for THIS Entity.
